American Flag Sheet Cake

If you know me, you know I am ALL about themed desserts & cakes! I mean, I am no good at it all the time whatsoever, but I love the idea!
What better way to celebrate an occasion, then with a perfect treat!
Here's a quick 30 minute eye-catching fruit cake you can whip together for your July 4th cook out or barbecue. It's fresh, cool, and a perfect treat for the kids.

INGREDIENTS:
CHOCOLATE CAKE BASE:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
2 teaspoons vanilla extract
1/2 cup vegetable oil or olive oil
1/2 cups water
1/2 cup milk
1/2 cup fruit juice
VANILLA BUTTERCREAM:
2 sticks unsalted butter, room temp.
3 cups powdered sugar
2 teaspoons vanilla extract
3 tablespoons milk

Blueberries & Strawberries
Instructions
1.Preheat the oven to 350 degrees F. Generously grease and flour an 11x17-inch half-sheet pan or coat with spray.
2. In a mixing bowl, whisk together dry ingredients (sugar, flour, salt, cocoa powder, baking soda),
3. Add the eggs, milk, oil, vanilla, water, and mix on medium speed for about 2 minutes.
4. Whisk together dry ingredients and wet ingredients for one minute.
5. Spread the cake batter into the sheet pan, smoothing it into a thin, even layer with a rubber spatula.
6. Bake for 30 minutes or until the top is lightly browned and a toothpick inserted in the center comes out clean, rotating the pan once halfway through.
7. Poke holes into the cake with a fork and generously pour over some fruit juice (any kind) - this helps to keep the cake moist and not dry.
8. Let cake cool in the pan completely. Meanwhile, make the frosting.
9. For the frosting: In the bowl of a stand mixer fitted with the paddle attachment, beat the the butter, then add the powdered sugar, vanilla, and milk.
10. Beat together on medium speed until smooth and combined.
11. Spread the frosting over the cooled cake.
12. Arrange blueberries in rows in top left corner to form the “star” portion of the flag.
13. Line the strawberry slices in 5 rows to form the “stripes.”
14. Refrigerate until ready to serve.
